Easy Weekday Lunch Salad
INGREDIENTS
1 package boneless/skinless chicken tenders
1 head/package of lettuce of your choice (I use sweet baby butter leaf)
1 lemon wedge
1 clove garlic (grated)
Salt & Pepper to taste
Extra Virgin Olive Oil
Splash white vinegar (you can substitute balsamic or apple cider vinegar)
INSTRUCTIONS
Cut chicken into small cubes, cook until no longer pink or until internal temp is 165° F. Add desired seasonings.
Toss desired amount of lettuce with olive oil, salt, pepper, add grated garlic, a good squeeze of lemon to taste, and a splash of vinegar
Top with diced chicken.
