Easy Weekday Lunch Salad

INGREDIENTS
  • 1 package boneless/skinless chicken tenders
  • 1 head/package of lettuce of your choice (I use sweet baby butter leaf)
  • 1 lemon wedge
  • 1 clove garlic (grated)
  • Salt & Pepper to taste
  • Extra Virgin Olive Oil
  • Splash white vinegar (you can substitute balsamic or apple cider vinegar)
INSTRUCTIONS
  • Cut chicken into small cubes, cook until no longer pink or until internal temp is 165° F. Add desired seasonings.
  • Toss desired amount of lettuce with olive oil, salt, pepper, add grated garlic, a good squeeze of lemon to taste, and a splash of vinegar
  • Top with diced chicken.
