Creamy Linguine with Mushrooms & Sheet pan Chicken

INGREDIENTS

2 lbs chicken breast, approx. 1 inch thick

2 garlic cloves, minced

1/3 cup breadcrumbs, Italian or plain–can add 1 tsp Italian seasoning to plan breadcrumbs!

1/2 tsp paprika

1/2 tsp cracked pepper

1/2 tsp sea salt

2 tbsp olive oil

2 cups spinach leaves, fresh

1 lb mushrooms, sliced

1 jar Alfredo sauce

1/3 cup grated parmesan

16 oz linguine

INSTRUCTIONS

Preheat the oven to 400. Prepare chicken by slicing into 3oz portions. Mix bread crumbs, paprika, cracked pepper, sea salt, and minced garlic then sprinkle on both sides of chicken and place on a greased sheet pan. Bake chicken at 400 degrees for 25 minutes.

Boil linguine in salted water for 10 minutes, then drain and set pasta aside.

Heat olive oil in pan. Sautee mushrooms for 5 minutes, then add spinach and mix until wilted. Add the jar of Alfredo sauce and heat thoroughly. Slowly mix linguine into sauce until well coated.

Serve in bowl, topped with parmesan cheese and sheet pan chicken. Enjoy!
